A group of engineers in Canada has introduced an innovative biodegradable fruit wash designed to solve two major concerns in food consumption: pesticide contamination and rapid spoilage of fresh produce. This advanced cleaning solution not only eliminates the majority of surface pesticide residues but also helps fruits stay fresh longer. Laboratory testing revealed that the new fruit wash can remove more than 86% of pesticide residues from produce surfaces. In some cases, removal rates reached as high as 94%, far outperforming traditional washing methods such as tap water, baking soda, or starch-based rinses. Even after standard rinsing, fruits and vegetables often retain trace chemicals. “Our objective was to develop a safe, effective, and affordable fruit wash that enhances both food safety and quality,” explained Tianxi Yang, assistant professor at the University of British Columbia’s Faculty of Land and Food Systems. She added that consumers should not have to worry about chemical residues when choosing healthy foods. The research was partly inspired by personal concerns, as Dr. Yang explored safer options after noticing her child’s frequent consumption of fresh berries.How the fruit wash works
The solution uses plant-derived starch particles sourced from crops like corn and potatoes. These are combined with iron and tannic acid—a natural compound found in tea and wine. Together, these ingredients form microscopic, sponge-like structures that cling to pesticide molecules and effectively lift them from the surface of fruits.Edible coating helps preserve freshness
In addition to cleaning, the process includes a second step that applies a thin, edible coating to the fruit. This protective layer acts as a breathable barrier, slowing oxidation and minimizing moisture loss without interfering with the fruit’s natural respiration. Tests showed that treated apple slices experienced significantly less browning and dehydration over a two-day refrigeration period compared to untreated samples. Added antimicrobial and nutritional benefits Beyond preserving freshness, the coating also demonstrated antimicrobial properties, helping to reduce the growth of harmful bacteria on fruit surfaces. The researchers confirmed that the process introduces only minimal amounts of iron, staying well within recommended daily intake levels established by North American health authorities. According to Dr. Yang, the formulation may even provide additional health benefits by incorporating micronutrients and plant-based compounds.Designed for real-world use
The biodegradable wash was created with scalability in mind. Its ingredients are inexpensive, easy to mix with water, and suitable for both commercial food processing and potential household use. Early cost estimates suggest the treatment would cost around three cents per apple—comparable to existing commercial coatings but with the added advantage of pesticide removal.Future applications and consumer potential
Researchers are now working to adapt the formula for large-scale production and testing its effectiveness across a wider range of fruits and storage conditions. The team is also exploring a consumer-friendly version, such as a dissolvable tablet or spray that could be used at home. “Imagine being able to add a simple solution to water before washing your fruit,” Dr. Yang suggested. Before reaching the market, the product will require further testing and regulatory approval.
